Baked Nor Cheesecake

Ingredients

  • 600 g nor cheese
  • 3 tbsp fresh cream
  • 150 g sugar
  • 8 eggs
  • 1 tsp vanilla
  • 1 piece orange – zest

For the Sauce

  • 2 cups frozen cherries
  • ½ cup sugar
  • 2 tbsp orange juice
  • 1 piece cinnamon stick
  • ½ cup powdered sugar – for decoration

Instructions:

  • Preheat the oven to 165°C.
  • Using a hand mixer, beat the nor cheese and fresh cream on medium-low speed until smooth and lump-free for 2 minutes. Add the sugar and beat until smooth.
  • Beat in the eggs, one at a time, until fully combined and you reach a creamy lump-free batter. Add orange zest and vanilla, and mix until just combined. Do not overmix.
  • Use a small-size cheesecake pan, and wrap the bottom of the pan with aluminum foil twice. Place the pan into a baking tray and add 4 cm of deep water. Pour the batter over the prepared pan. Bake in the oven for 50 minutes.
  • The cheesecake should be taken out of the oven when the edges are set but the center is still jiggly.
  • Cool the cake down until completely cold. Cover the cake with cling film and refrigerate for at least 4 hours before serving. It tastes even better the next day!
  • Prepare the sauce to serve with the cheesecake. Combine all the ingredients in a saucepan and cook for 15 minutes on low heat. Remove the cinnamon stick and cool down the sauce. Serve with the cheesecake.
