Courgette Fritters with Halloumi

Ingredients

  • 75 g halloumi – grated
  • 500 ml vegetable oil – for frying
  • 200 g courgette – grated
  • ½ cup flour – add gradually
  • 1 tsp baking powder
  • 1 egg – beaten
  • 1 stalk spring onions – finely chopped
  • 1 tbsp fresh mint – finely chopped
  • Salt & pepper – to taste
  • 1 cup strained yoghurt – to serve

Instructions:

  • Combine the grated courgette, egg, halloumi, baking powder, spring onions, and fresh mint in a large bowl. Add some salt and pepper, then mix well. Gradually stir in the flour until the desired consistency is reached.
  • Heat a non-stick frying pan over medium heat and add oil about 4 cm deep. Take egg-sized pieces from the mixture with a spoon, fry the fritters for 2-3 minutes on each side until golden brown.
  • Spread the strained yoghurt on a plate and place the fritters on top. Serve straight away.
