Cypriot Style Baked Pasta

Ingredients

  • Onion: 1 piece (medium size, finely chopped)
  • Mushroom: 600 g (finely chopped)
  • Parsley: ½ bunch (finely chopped)
  • Salt & Pepper: To taste
  • Pasta: 1 pack (Bucatini)
  • Milk: 2 liters
  • Eggs: 3 pieces
  • Flour: 100 g
  • Butter: 100 g
  • Nutmeg: ½ tsp (grated)
  • Halloumi: 200 g (grated)
  • Talar Cheese: 100 g (grated)
  • Dried Nor: 100 g (grated)

Instructions:

  • Boil the pasta whole (without breaking) in boiling water. Once cooked, drain and add 3 tbsp vegetable oil to the pasta to prevent sticking together.
  • In a bowl, mix the grated halloumi, talar cheese, and dried nor together.
  • Prepare the bechamel sauce. Heat the butter and the flour. Cook for 8 minutes on low heat, whisking, and start adding the milk gradually. Continue whisking to prevent clumping. Once thickened, remove from the heat, add nutmeg, and mix well.
  • Whisk the eggs in a bowl, add one cup of bechamel sauce into the bowl for tempering. Take the egg mixture back into the bechamel sauce and mix well to prevent curdling. Lastly, add 1/3 of the cheese mixture into the bechamel sauce. Add salt if needed.
  • Cook the mushrooms by adding 3 tbsp vegetable oil with onions, adjust the taste by adding salt and pepper as needed, and add the parsley once cooked.
  • Into a thick baking tray, add half of the pasta, top with the mushroom mixture, and 1/3 of the cheese mixture. Continue with the other half of the pasta, finish the last layer by spreading the sauce on top of the pasta, and sprinkle with the rest of the cheese mixture. Bake for 30-40 minutes at 180°C.
  • Wait for the dish to cool down for at least 40 minutes. Cut into pieces to serve. Enjoy!
