Cypriot Style Pasta & Chicken

Ingredients

Chicken

  • 4 pieces chicken thighs & legs
  • 1 medium-sized onion – whole
  • 6 pieces cloves
  • 2 pieces bay leaf
  • 1 lemon – juice
  • Vegetable oil – for baking

For Pasta

  • 1 pack pasta – bucatini
  • Chicken stock – as needed
  • 150 g halloumi – grated
  • 50 g dried nor – grated
  • 1 tbsp dried mint

Instructions:

  • Clean the chicken pieces with lemon juice and place them in a clean pot for boiling.
  • Cut the onion in half, place the bay leaf on the flat surface, and pierce with cloves for each half. Add these to the pot and top with 3 liters of water. Add salt and pepper, then cover for boiling.
  • Meanwhile, prepare the grated halloumi and nor, mix with dried mint, and set aside.
  • Once the chicken pieces are fully cooked, remove them from the stock. Clean the stock by removing any pieces of onion and spices.
  • Heat the stock again and cook the pasta in the chicken stock.
  • Preheat the oven to 180°C. Line a baking tray with grease-proof paper and place the chicken pieces skin side up. Lightly spread some vegetable oil on each piece and sprinkle with salt and pepper. Bake for 15 minutes or until the top is golden brown.
  • Serve the pasta in individual portions, sprinkle with the cheese mixture, top with baked chicken pieces, and enjoy!
