Halloumi Burger

Ingredients

  • 2 pieces ‘Burger’ halloumi
  • 1 egg
  • ½ cup milk
  • ¾ cup panko bread crumbs
  • ½ cup flour
  • Paprika – to taste
  • Salt & pepper – to taste
  • 250 ml vegetable oil – for frying
  • 2 pieces burger bun – brioche would be great!
  • 1 piece onion – caramelized
  • 1 piece carrot – grated
  • 2 tbsp olive oil
  • 1 tbsp mayonnaise
  • 2 tbsp strained yoghurt
  • 1 cup greens – your choice
  • ⅓ cup pickled cucumbers – sliced

Instructions:

  • Begin with pan-frying the halloumi. Whisk together the egg and milk, add salt and pepper, and set aside. Take the flour and season it with salt and paprika. Take the panko bread crumbs into another bowl and add paprika.
  • Take the halloumi pieces and dip them first in the egg mixture and again in the flour, followed by the milk mixture, lastly dipping into the panko until covered completely. Chill in the fridge for 10 minutes.
  • Prepare the sauce by lightly sautéing the carrots with olive oil in a non-stick pan. Once done, remove from heat and combine in a bowl with yoghurt and mayonnaise. Add salt and pepper and keep in the fridge.
  • Meanwhile, caramelize the onions and cut the bread horizontally, grilling lightly.
  • Heat the oil in a non-stick pan and fry the halloumi until golden brown. Rest on paper towels to remove excess oil.
  • For the bottom layer of the bread with sauce, place greens, top with halloumi, pickled cucumbers, caramelized onions, and more sauce. Serve right away!
