Halloumi Fries & Pea Hummus

Ingredients

  • 200 g halloumi
  • 250 ml vegetable oil – for frying
  • 100 g green peas – frozen
  • 2 tbsp tahini
  • 1 lemon – juice
  • 1 clove garlic
  • 1 tbsp fresh mint – chopped
  • 3 tbsp olive oil
  • 1 tsp cumin
  • Salt & pepper – to taste
  • 2 tbsp fresh pomegranate – to serve (optional)
  • Sumac – to serve (optional)
  • 1 tbsp fresh mint – shots (optional)

Instructions:

  • Chop the halloumi into finger-width pieces and rest on paper towels to remove excess juice.
  • Prepare the peas by boiling them in hot water for 5 minutes, then transfer to ice-cold water to stop cooking.
  • Place the peas in a blender and add two cubes of ice, lemon juice, garlic, olive oil, tahini, cumin, mint leaves, and salt & pepper. Blend until smooth.
  • Fry the halloumi pieces in two batches and rest on paper towels to remove excess oil.
  • Serve the hummus in a big plate, topped with fried halloumi pieces and sprinkled with pomegranate, sumac, and fresh mint shots. Enjoy!
