Halloumi & Olive Pie

Ingredients

  • 200 g unsalted halloumi – shredded
  • 100 g olives – pitted
  • 1 tbsp dried mint
  • 3 medium-sized eggs
  • 3 cups cake flour
  • 1 tsp sugar
  • 1 tsp baking powder
  • ½ cup yoghurt
  • ½ cup sunflower oil
  • ¼ cup olive oil
  • 2 tbsp fresh mint – finely chopped
  • ½ cup orange juice
  • ½ tsp salt
  • Sesame seeds & nigella seeds

Instructions:

  • Preheat the oven to 165°C. Line a cake tin with greaseproof paper or coat with sunflower oil and sift some flour to prevent sticking.
  • Mix the dry ingredients in a bowl. Sift in the flour and baking powder, then add dried mint and salt.
  • In another bowl, mix together the halloumi, olives, and chopped fresh mint. Coat the mixture with 1 tablespoon of flour.
  • In a separate bowl, beat the eggs and sugar with an electric mixer until frothy.
  • Add sunflower oil, olive oil, orange juice, and yoghurt to the egg mixture, continuing to mix. Set aside the electric mixer.
  • Gradually add the dry ingredients, folding them into the mixture with a spatula.
  • Lastly, add the halloumi mixture and fold it in gently. Transfer the mixture into a cake tin of your choice.
  • Top with sesame and nigella seeds, and bake for 45-50 minutes. Check with a toothpick from the center to ensure it’s cooked through.
  • Serve with a warm cup of tea and enjoy!
