Ingredients

  • 4 pieces Chicken Breast – Cut into large cubes
  • 2 tbsp Tomato paste
  • 400 g Chopped tomatoes – Canned
  • 2 pieces Onion – Medium size / finely chopped
  • 6 pieces Mushroom – Quartered
  • 1 tsp Cumin
  • Salt & pepper – To taste
  • 500 ml Vegetable oil – For frying
  • Water – As needed
  • 1 pack Pasta – Bucatini
  • 150 g Halloumi – Grated
  • 50 g Dried Nor – Grated
  • 1 tbsp Dried mint

Instructions:

  • Heat the oil and add the chicken pieces. Once cooked, remove the chicken from the oil and reduce the oil in the pan to two tablespoons.
  • Add the onions and mushrooms, then sauté for 10 minutes on low heat. Add tomato paste and cook for two more minutes.
  • Add chopped tomatoes and seasonings, cooking for five more minutes on low heat. Add water as needed, cover with a lid, and cook on low heat for 40 minutes.
  • Meanwhile, cook the pasta in boiling water.
  • In a bowl, mix together the grated halloumi, dried nor, and dried mint.
  • Serve the stew (yahni) over boiled pasta, sprinkle with the grated halloumi, dried nor, and dried mint mixture, and enjoy!
