Spinach & Nor

Ingredients

  • 8 pieces cannelloni
  • 300 g spinach – frozen
  • 3 tbsp butter
  • 1 clove garlic – grated
  • 300 g nor cheese – separated into two portions
  • Salt & pepper – to taste

For Béchamel

  • 50 g butter
  • 50 g flour
  • 600 ml milk
  • ¼ tsp nutmeg
  • Salt – to taste

For Napolitana

  • 300 g tomato passata
  • 1 clove garlic – grated
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 piece bay leaf
  • 1 tsp sugar
  • Salt & pepper – to taste

Instructions:

  • Sauté the spinach in butter and add grated garlic.
  • Take into a bowl with half of the nor cheese and, using a stick blender, mix until smooth. Add salt and pepper to taste. Transfer the mixture into a piping bag.
  • Parboil the cannelloni and stuff with the spinach mixture.
  • Meanwhile, prepare the Napolitana sauce by heating olive oil in a small saucepan. Add garlic, tomato passata, and other ingredients. Cook together for 10 minutes on low heat.
  • For the béchamel sauce, melt the butter in a small saucepan and cook for a couple of seconds. Add flour and cook, stirring until the mixture smells like cookies. Gradually whisk in the milk, add nutmeg, and cook until thickened. Adjust salt to taste.
  • In a deep baking dish, add 1 serving spoon of Napolitana sauce and 1 serving spoon of béchamel sauce. Place the stuffed cannelloni on top, then cover with the remaining sauces. Finish with the rest of the nor cheese.
  • Bake for 20 minutes at 180°C. Serve warm and enjoy!
