Sweet Potato Salad with Halloumi

Ingredients

  • 100 g light halloumi – sliced into 2 cm thick pieces
  • 200 g sweet potatoes – cut into large cubes
  • 1 piece chili pepper – finely chopped
  • 2 tbsp honey
  • 2 pieces lime or lemon – juice
  • 4 tbsp olive oil
  • 400 g greens – mix greens of your choice
  • 2 stalks spring onions – finely chopped
  • ½ cup hazelnuts – roasted/unsalted

Instructions:

  • Bake the sweet potatoes for 40 minutes at 180°C or until soft enough.
  • Meanwhile, prepare the sauce in a small saucepan by combining the chili peppers, honey, lime/lemon juice, and olive oil. Heat gently until bubbles form and set aside.
  • In a non-stick pan, cook the halloumi pieces on both sides until caramelized.
  • In a big bowl, combine the greens and the spring onions. Top with the sweet potatoes and chopped hazelnuts.
  • Finally, add the halloumi pieces and spread the sauce over the salad. Serve right away and enjoy!
